My Mom always taught me that the best way to show people that you love them is to cook for them. I love making dinner for Nick (and of course I love it when he cooks for me!), and it’s a special treat when we get to cook together for our friends and family. Living in San Diego has been a major adjustment because I no longer have my main girls nearby to shower with goodies. Clearly, the answer to this is gift boxes.
The first on our list was Lauren, who got a box of her favorite bacon, cheddar, scallion scones last week. This week, our amazing former roommate Sarah will be receiving her box. Even though I only made it a couple of times, Sarah was always asking me to please make more fudge. This fudge is amazing, so she was pretty justified in asking. It is decadent, rich, chocolatey, and crazy good. I have a major sweet tooth and one square of this totally sets it at bay. This fudge has been affectionately named BFFF, Best Friends Forever Fudge, because sharing it is the absolute best way to show your BFFs how much they mean to you.
BFFF (Best Friends Forever Fudge)

Hands on time: 15 minutes
Total time: around 3 hours (to allow fudge to set)
- 8 tbs butter, cut into 1 tablespoon squares
- 12 oz milk chocolate chips
- 1 3/4 cups white sugar
- 2/3 cup evaporated milk
- 3 cups mini-marshmallows
- 1 tsp vanilla
- 1 cup chopped walnuts
In a large pan, mix together the evaporated milk and sugar over medium-high heat until the sugar melts. Throw in the mini marshmallows and keep stirring continuously until all of the marshmallows melt. Remove the pan from the heat and stir in the butter squares and chocolate chips, continuing to stir until smooth.
Add the vanilla and beat to combine, then stir in the walnuts until evenly incorporated. Coat a 13 x 9 pan with non-stick spray or line it with parchment paper and pour in the hot fudge mixture.
Put your pan in the refrigerator or freezer (depending on your level of desperation to start eating the fudge) and allow to cool until solid, 2-5 hours. Devour, and share with your best friend.
